1 drained 14 oz can quartered artichoke hearts
1/2 crumbled cup goat cheese
2 chopped cup tomato
2 sliced cup arugula
1/3 cup olive oil
1 pound cooked and drained pasta
1. Combine all ingredients and blend well with one pound cooked and drained pasta (do not rinse). Serves 4.
2. Note: Gemelli pasta works great with this recipe.
