RECIPE:
Spicy Cornmeal Crisps

This is a great spicy appetizer for any party.

Total Time: 20 minutes

INGREDIENTS:
1/2 cup cornmeal
1 1/2 tsp red, green or chipotle chili powder
1/4 tsp ground black pepper
1 tbsp butter, or if you prefer margarine



DIRECTIONS:
1. Preheat oven to 400°F (200°C).
2. Lightly oil or coat 2 baking sheets with nonstick cooking spray.
3. In a small bowl, combine cornmeal, chile powder and black pepper.
4. Add margarine or butter and, using a pastry cutter, cut into the cornmeal mixture until it resembles fine crumbs.
5. Add 1/2 cup boiling water and stir well.
6. Transfer cornmeal mixture into a plastic sandwich bag and cut a 1/4-inch (1 cm) hole in one corner.
7. Pipe the mixture into 4-inch (10 cm) strips on each baking sheet, leaving approximately 1-inch (2 1/2 cm) between strips.
8. Bake, one sheet at a time, for about 10 minutes, or until crisp and golden. Makes lots!
