1 lb chicken, cubed
2 tsp soy sauce divided
3.5 tsp cornstarch divided
2 tsp sherry
1/2 tsp salt
4 tbsp peanut oil divided
1 cup bamboo shoots
1 green bell pepper, diced
1 celery, diced
1 4 oz can button mushrooms, quartered
1 cup cashews
1/2 tsp sugar
3 tbsp water
1. Combine chicken cubes with 1 tsp. soy sauce, 2 tsp. cornstarch, sherry, salt, and 1 tbsp. oil.
2. Set aside.
3. Prepare a gravy thickening by using 1 1/2 tsp. of cornstarch mixed with sugar and combining with 1 tsp. soy sauce and the water.
4. Set aside.
5. Cook bamboo (other vegetables may be substituted or added), green pepper, celery, and mushrooms in 1/2 tbsp. oil.
6. Heat 2 1/2 tbsp. oil.
7. Stir fry chicken quickly over heat.
8. Add liquid from vegetables and stir well.
9. Add gravy thickening.
10. Garnish with 1 cup cashews or almonds.
11. Serve immediately.
