1. 1.0 chopped large ripe tomato
10. oregano
2. 1.0 seeded and chopped cucumber
3. 0.5 seeded and chopped red bell pepper
4. 0.5 seeded and chopped green bell pepper
5. 2.0 sliced scallion
6. 2.0 seeded and chopped tbsp black olives
7. 2.0 tbsp capers
8. 4.0 tbsp olive oil
9. 0.5 lemon
1. Combine vegetables, olives and capers in a bowl.
2. Squeeze lemon juice over vegatables and toss with olive oil.
3. Season with dried oregano.
