RECIPE:
Baked Halibut with Papaya Salsa

Excellent source of Vitamins D and E from the halibut; wonderful source of potassium from the halibut and papaya (and you thought only bananas were high in potassium!); also exceeds the RDA for Vitamin C!

Cook Time: 10 minutes
Total Time: 35 minutes

INGREDIENTS:
4 halibut fillet
2 tsp fresh basil, chopped
2 tsp chile sauce
1 lime, juiced
2 tbsp vegetable oil
1/2 tsp cumin
salt & pepper to taste
1 tbsp unsalted butter
1/4 cup white wine

5. freshly ground pepper
6. 2.0 peeled, seeded, and diced papaya
7. 0.5 diced small red onion
8. 2.0 chopped clove garlic
9. 2.0 chopped tsp fresh ginger



DIRECTIONS:
1. Preheat the oven to 400 degrees.

2. Place the halibut fillets on a baking sheet that has been buttered with the 1 tablespoon of butter.

3. Sprinkle the fillets with the wine and season them to taste with salt and pepper.

4. Set aside while you prepare the Papaya Salsa.

5. In a medium nonreactive bowl, mix together the papaya, onion, garlic, ginger, basil, chile sauce, and lime juice.

6. Add the vegetable oil, cumin, salt, and pepper.

7. Toss gently and set aside.

8. Place the halibut in the oven and bake it for about 10 minutes, or until the fish flakes to the touch.

9. Place the fillets on a serving dish topped with the Papaya Salsa.
