1/3 cup golden sherry
1/3 dried apricot, cut in strips
1 medium onion
2 tbsp. safflower oil
3 breasts of chicken, cut in pieces
1/2 tsp dried basil
1/4 tsp cinnamon
1. Pour sherry over apricots and set aside.
2. In frying pan, saute onion in oil until golden.
3. Remove onion.
4. Brown chicken on all sides in oil remaining in pan for about 5 minutes.
5. Add onion, apricots, sherry, basil and cinnamon. Cover pan.
6. Cook over low heat for an hour, turning once.
7. Remove cover for the last 15 minutes.
