RECIPE:
Carrot Parsley Salad

A refreshing salad, bright and slightly sweet from carrots. Find more salads in the iVillage Recipe Finder!

INGREDIENTS:
5 carrots, shredded
1 bunch fresh parsley, finely chopped
4 tablespoons lemon juice
2 tablespoon vegetable oil
1 clove garlic, crushed
Salt and pepper to taste



DIRECTIONS:
1. Toss carrots and parsley together and set aside.

2. To prepare dressing, combine remaining ingredients and adjust to taste.

3. Add to carrot mixture and mix well.
